Kanatçı Haydar, The Birth Of A City Legend
If you are an old dweller of the Kocasinan district of İstanbul, you have probably witnessed the emergence of the first example of the sector of chicken wings, which has continually been rising thereafter. One would not probably expect this small place to evolve into a very famous brand of food, however, even in that time, it was known to serve peoples taste with its different service conception.
First began with the purpose of serving the passengers and the tradesmen and artisans of the district, this sweet place offered meatballs, pancreas and bread; then continued its adventure with new products which were results of the experience and experiments of Mr. Haydars own.
1993 was the turning point in this process of experiment and search for new concepts of service. In this year, Mr. Haydar attempted to serve chicken wings, which had not hitherto appeared in food literature and which were regarded by the butchers as a side product of chicken to be got rid of in cheap prices, with a special souce he himself produced. This invention was so favored by the costumers that it eventually replaced all other products. If you investigate the increasing production of chicken wings in the last two decades, you will easliy notice that 1993 is a real turning point in this sector. This is, at the same time, a good proof of that Kanatçı Haydar is the first in this sector.
Together with the increasing demand, Mr. Haydar changed his small place two times and moved to the vacant area just across his current place. This new place became famous throughout İstanbul, with its name ‘Teneke(Tin) Restaurant’, without any advertising but only its own customer portfolio. Evaluating the proposals offered to him, Mr. Haydar set up a partnership with the owners of ‘Kocasinan Ocakbası’, on Mahmutbey Avenue Depo station, attached to Gelişim Hospital. However, his partners wanted to impose some mispolicies, although they initially promised to remain only partners of capital. Therefore, Mr. Haydar refused to obey and moved to his current place, that is, Mezbaha Avenue Ahlat Street, across the former ‘Teneke Restaurant’. The legal process over the brand name is still going on. Therefore, Haydar Bey now has no connection with the restaurant named ‘Kanatçı Haydar’ın Yeri’ which is on Mahmutbey Avenue Depo station, attached to Gelişim Hospital. Neither has he any connection with ‘Mahmutbey Kanatcisi’ in Kozyatağı and ‘İstanbul Kanatcısı’ in Çerkezköy.
